Informations

It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast, then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxide from the fermentation if forced into the wine.

The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.


Tasting Notes

Brut : Pale straw colour. Crisp, fresh and elegant Irish sparkling wine with notes of apple, citrus and strawberry. Lingering finish with a combination of fresh fruits.

Rosé : Pale pink colour. Crisp, fresh and elegant Irish sparkling wine with notes of redcurrant, citrus and wild strawberry. Lingering finish with a combination of fresh red fruits.

 

 


Food Pairing

Brut : Enjoy on its own or perfect pairing to the classic Irish fish and chips.

Rosé : Enjoy on it sown or perfect pairing to the classic Irish raspberry cheesecake.
