Our wines are crafted and produced at our winery in Ireland, guided by a world-class winemaking team with deep expertise in still and cool-climate styles.
As we continue to develop and expand our vineyards, we work with carefully selected fruit that meets our exacting standards. This approach allows us to define a distinctive house style — elegant wines shaped by freshness, balance, and precision.
Our portfolio includes Irish Aged Wines, matured in Irish whiskey casks — a distinctive meeting of two great Irish traditions.
We also produce Irish Sparkling Brut and Rosé, crafted using the Charmat method at our vineyard to preserve vibrant fruit, finesse, and a refined, modern character.
Our Signature Series — DEARG and BÁN — represents the purest expression of our winemaking philosophy, defined by structure, clarity, and varietal character.
The Discovery Series reflects our commitment to innovation, featuring wines from experimental plantings and progressive techniques as we continue to explore and define the potential of Irish wine.
Irish Aged Series
Our ‘Aged Series’ is a collection of Irish Aged wine which features an Irish Chardonnay and an Irish Shiraz.
Our Aged series are aged in Irish Whiskey barrels for 3 months giving them a velvety finish with subtle heat. These wines feature true Irish Whiskey flavor which gives them a unique finish and taste.

Irish Aged Chardonnay
Fairy Trees Irish aged Chardonnay is aged in Irish Whiskey Barrels for 3 months, giving it a velvety mouthful with subtle heat.
Our beautiful Chardonnay collides in our Whiskey barrels to create this gold and creamy wine, which features true Irish Whiskey flavour.
Irish Aged Shiraz
Fairy Trees Irish aged Shiraz is aged in Irish Whiskey Barrels for 3 months, giving it a velvety mouthful with subtle heat.
Our beautiful Shiraz collides in our Whiskey barrels to create this dark and bold wine, which features true Irish Whiskey flavour.
Irish Sparkling
Irish Sparkling rosé
It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast, then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxide from the fermentation if forced into the wine.
The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.
Irish Sparkling Brut
It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast (together called the liqueur de tirage), then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxyde from the fermentation is forced into the wine.
The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.

We proudly cultivate two unique fields: “Willistown,” spanning 12 acres, and “The Burren,” covering 8 acres. Each field boasts its own orientation and distinctive characteristics, promising wines with singular tastes that truly embody their origins.

Discovery Series Irish Rosé
Our ‘Discovery Series’ Irish Rosé will be available from March 2026. Featuring a 2025 harvest which will have limited availability.
Discovery Series Irish Rosé
This rich yet pure style of Irish rosé has flavours of bright red berries, tropical notes and zesty citrus.
Our Discovery Series Irish Rosé is a blend of Cabernet Cortis and Artaban.
Grapes were hand-picked and whole-bunch pressed before cool fermentation in stainless steel tanks to preserve the natural fruit flavours.

DEARG
DEARG defines the red identity of our Signature Series — precise, structured, and crafted in Ireland with restraint and focus. Its layered red fruit character and refined tannins express a contemporary cool-climate style designed for elegance and gastronomic versatility.
DEARG Signature Series
DEARG is a refined introduction to our Signature Series — a carefully composed blend led by Shiraz, Cabernet Cortis, and Artaban.
This expressive red displays vibrant aromas of red berries and ripe plum, layered with subtle baking spice. The palate is smooth and balanced, with supple structure and a long, elegant finish.
A short maceration enhances colour and aromatic intensity before gentle pressing. Cool fermentation in stainless steel preserves freshness, purity of fruit, and clarity of expression.
BÁN
BÁN expresses the white identity of our Signature Series — refined, precise, and crafted in Ireland with a focus on structure and freshness. Its purity of fruit and poised acidity define a contemporary cool-climate style designed for balance and gastronomic versatility.
BÁN Signature Series
BÁN is a precise and elegant expression within our Signature Series — a carefully balanced blend led by aromatic and cool-climate varieties selected for freshness and purity.
The wine opens with lifted aromas of citrus, orchard fruit, and delicate floral notes. The palate is bright and finely structured, with vibrant acidity and a clean, persistent finish that reflects our focus on balance and clarity.
Gentle pressing is followed by cool fermentation in stainless steel to preserve aromatic intensity and natural freshness, allowing the fruit to remain expressive and refined.
