Welcome to Fairy Trees Winery & Distillery, in County Louth on Ireland’s east coast.
At Fairy Trees, we are bringing to Ireland a tradition deeply rooted in the Cognac region of France. For centuries, winegrowers there have not only grown grapes and made wine, but have also distilled their wines, blended their eaux-de-vie and matured their own brandies in oak.
We are bringing this same philosophy to Ireland : From vineyard to wine, and from wine to spirit.
From our vineyards dear Dunleer, we grow grapes, make and blend wines, mature selected wines in French oak and Irish barrels, and distill wine using traditional Charentaise double distillation.
The resulting spirit is matured in oak to create our Irish Grape Brandy, while our own grape brandy is also used to fortify fresh Irish grape must to create Dawn of Dee, our Irish Wine Liqueur.
Rooted in Ireland and shaped by generations of French winemaking and distilling experience, Fairy Trees is exploring a new expression of what can be created from grapes on the Irish east coast.
Our wine collection brings together Irish-grown grapes with carefully selected wines from Ireland, France and Brittany. Discover our Signatures Series, Celtic Series, Oak Series and Irish sparkling wines – each offering a different expression of the Fairy Tres story.
Our journey does not end with wine. We distill wine using traditional Charentaise double distillation before the resulting spirit is matured in oak to create our Irish Grape Brandy.
We also use our Grape Brandy to fortify fresh Irish grape must to create Dawn of Dee, our Irish Wine Liqueur. Two distinctive products born from grapes, wine and distillation – and from our desire to explore what can be created here in Ireland.
