THE FAIRY TREES COLLECTION
At Fairy Trees, our wine collection reflects a meeting of places, traditions and ideas. From wines that bring together Ireland and France, to a Celtic connection between Ireland and Brittany, to wines matured in French oak and Irish whiskey barrels, each collection has its own identity.
Our approach combines experience in French winemaking with the possibilities of an emerging wine culture in Ireland. The result is a diverse portfolio of still, oak-matured and sparkling wines designed to be enjoyed, shared and discovered.
SIGNATURE SERIES
BÁN – DEARG – Bándearg
The heart of the Fairy Trees collection. Our Signature Series brings together carefully selected Irish and French wines, blended and crafted at Fairy Trees Winery in County Louth.
BÁN is fresh, bright and expressive. DEARG is rich, generous and balanced. Bándearg – Irish for pink – is a fresh rosé with red berry, citrus and floral notes.
CELTIC SERIES
BÁN GWENN – DEARG RUZ
Our Celtic Series brings together carefully selected wines from Ireland and Brittany, celebrating
the shared Celtic heritage and Atlantic character of the two regions.
BÁN meets Gwenn – white in Irish and Breton. DEARG meets Ruz – red in Irish and Breton. Two Celtic regions brought together through wine.
OAK SERIES
BÁN – DEARG
Our Oak Series begins with carefully selected Irish and French wines. The wines are matured for 12 months in French oak before spending a further three months in Irish whiskey barrels, bringing together wine, French oak and an unmistakably Irish influence.
IRISH SPARKLING
Brut – Rosé
Our sparkling wines are made using the Charmat method, with a second fermentation in sealed pressure tanks for approximately six weeks. The result is a fresh, vibrant sparkling style designed for celebration and the table.
Irish Sparkling
Irish Sparkling rosé
It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast, then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxide from the fermentation if forced into the wine.
The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.
Irish Sparkling Brut
It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast (together called the liqueur de tirage), then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxyde from the fermentation is forced into the wine.
The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.

A richer and more textured expression of BÁN, created through extended maturation and an Irish whiskey-barrel finish.

A blend of carefully selected Irish and French wines.

Matured for 12 months in French oak, followed by a further 3 months in Irish whiskey barrels. This two-stage maturation adds depth, texture and complexity.
DEARG – Oak Series
STORY
The Oak Series DEARG takes the generous fruit of our red-wine style and develops it through extended oak maturation followed by an Irish whiskey-barrel finish.

Matured for 12 months in French oak, then finished for 3 months in Irish whiskey barrels, adding structure, depth and distinctive layers of oak and spice.
