New Irish Grape Brandy & Fortified Wines
A new chapter begins at Fairy Trees Winery.
We are proud to introduce a new collection of Irish grape-based creations, beginning with our Irish Grape Brandy and our Irish Fortified Wines. Distilled from wine in our 600-litre copper still, our brandy is crafted using the traditional Charentaise double distillation method, then aged in French oak barrels and finished in Grand Cru casks.
Alongside our brandy, we are launching our Irish Fortified Wine collection at 18% alc., starting with a white fortified wine and followed by a rosé.
From wine to spirit, from still to cask, these new releases celebrate the character, elegance and potential of Irish grapes.
Irish Grape Brandy
Distilled from wine. Aged with patience. Crafted in Ireland.
Fairy Trees Winery is proud to introduce what we believe to be Ireland’s first Irish Grape Brandy.
Distilled from wine in our 600-litre copper still, our brandy is crafted using the traditional Charentaise double distillation method. The wine is first distilled to create the brouillis at around 32% alc., before a second distillation produces the eau-de-vie at around 78% alc.
The spirit is then aged for a minimum of 18 months in traditional French oak barrels, before being finished for six months in Grand Cru casks. Once ready, it is carefully blended and reduced to 40% alc. with reverse-osmosis water, giving the brandy a smooth, fine and silky finish.
