Our Wines
Our wines are produced from grapes grown in the East of Ireland. We have a world-class winemaking team with extensive experience in still wine and cool climate wine regions.
Our wines are made to the highest standards using the latest winemaking techniques, resulting in elegant wines with balanced acidity and rich fruit characters.
In 2023 we introduced our first collection ‘Irish Aged Wines’ which is a collection of wines aged in Irish Whiskey Casks.
In 2024, we will launch our ‘Discovery series’ which is a collection of wines led by our winemaking team produced from experimental plantings and modern winemaking practises to better understand the versatility of this new and unexplored wine region.
Early 2025, we will launch the first ‘Irish Sparkling Brut’ and Rosé, a Charmat method sparkling produced at our Vineyard.
Irish Aged Series
Our ‘Aged Series’ is a collection of Irish Aged wine which features an Irish Chardonnay and an Irish Shiraz.
Our Aged series are aged in Irish Whiskey barrels for 3 months giving them a velvety finish with subtle heat. These wines feature true Irish Whiskey flavor which gives them a unique finish and taste.

Irish Aged Chardonnay
Fairy Trees Irish aged Chardonnay is aged in Irish Whiskey Barrels for 3 months, giving it a velvety mouthful with subtle heat.
Our beautiful Chardonnay collides in our Whiskey barrels to create this gold and creamy wine, which features true Irish Whiskey flavour.
Irish Aged Shiraz
Fairy Trees Irish aged Shiraz is aged in Irish Whiskey Barrels for 3 months, giving it a velvety mouthful with subtle heat.
Our beautiful Shiraz collides in our Whiskey barrels to create this dark and bold wine, which features true Irish Whiskey flavour.
Irish Sparkling
Irish Sparkling
It begins with the creation of an uncarbonated base wine. This wine is then mixed with a measure of sugar and yeast, then put in a large stainless steel pressure tank. The yeast and sugar cause a second fermentation in the closed tank which is held under pressure so the carbon dioxide from the fermentation if forced into the wine.
The second fermentation takes 6 weeks, after which our sparkling wine is immediately filtered and bottled.

At Fairy Trees Winery, our passion for distinctive wines is rooted in the diversity of our lands. We proudly cultivate two unique fields: “Willistown,” spanning 12 acres, and “The Burren,” covering 8 acres. Each field boasts its own orientation and distinctive characteristics, promising wines with singular tastes that truly embody their origins.

Willistown will be available in 2026 and The Burren will be available in 2028
Discovery Series
Our ‘Discovery Series’ is a collection which will be available from March 2025. Featuring a 2024 harvest which will have limited availability.
Discovery Series
This rich yet pure style of Irish dry white has green apple and citrus peel aromas with background oak influence.
Grapes were hand=picked and whole-bunch pressed before cool fermentation in stainless steel tanks to preserve the natural fruit flavours. It is aged then on lees in oak barrels for 6 months.
